After the last retreat several of you asked for some of our recipes. Below are two of our favorites.
Breakfast Quiche
This recipe makes 2 quiche.
1 lb sausage
2 cups shredded cheddar cheese
2 deep dish pie shells
1 lg can pet milk
6 eggs
1 Tbsp. self rising flour
Brown sausage & drain. Put half in each pie shell. Put 1 cup of cheese of top of each. Mix pet milk, eggs & flour together & pour half over each. Bake @ 325 for about 30 - 45 minutes. (Don’t thaw pie shells 1st & bake them on a cookie sheet) Just watch to see when it’s done.
I have made this using Jimmy Dean low fat sausage, 2% cheese & fat free pet milk & it’s just as good.
Monkey Bread
4 cans of biscuits (10/can)
½ cup sugar
2 Tbsp cinnamon
1 ½ sticks butter
1 ½ cups brown sugar
1 Tbsp cinnamon
Mix ½ cup sugar & 2 Tbsp cinnamon in a bowl or ziploc bag. Cut each biscuits in fourths. (Use a pizza cutter!) Put a few pieces in the mix & coat well. Drop in a well greased bundt pan to form a layer from each can of biscuits. After using 2 cans, mix the butter, brown sugar & cinnamon in a saucepan; heat & pour ½ on top of the layer. Continue with the other 2 cans of biscuits & then pour the remaining liquid on top. (If you want pecans, just put some on each layer with the liquid
mixture) Bake @ 350 for about 30 minutes.
